LeBlanc's Processing opened in 1996 as a little back yard operation to handle personal deer processing needs.  From that point on, as more and more neighbors and friends tasted the sausages I'd create, it grew into a full blown operation of processing all wild game (including alligators), as well as the wholesale of crawfish all over the United States.  Paired with feedback from you, we are excited to expirement with our skills and create items to continually expand our menu past our well-known sausages. 

Our season starts in September, in which we process wild-caught alligators. Starting in October and through the month of January, we process other wild game such as hogs, deer, duck, geese, and other exotic animals. At the beginning of February, we begin the harvest of pond crawfish as well as purchase spillway crawfish from fisherman all around the region.  In the attached menu you will find our Deer Processing costs,as well as other services offered.
